This is my Panfish Specialty filet knife. It has a great feel in your hand and has good flex to it to accommodate most types of fish fileting. The stainless steel is very thin, which makes for a light knife to hold, and I've found an awesome handle option in the Kirinite, which not only looks amazing, but it also has a rubbery-like feel to it. This gives you good consistent grip...a good thing for filet knives, which are commonly wet and have fish slime on them. The crazy thing about the Kirinite is that it actually has a better grip when it gets wet! The material gets a very rubbery feel to it when it gets wet, pretty cool.
